Students will examine school lunch programs\, elder care nutrition\, food access\, and sustainability while engaging with local experts and institutions. An extended regional excursion offers insight into agricultural practices and regional foodways. Through experiential learning and reflection\, participants gain a global perspective on health\, nutrition\, and cultural approaches to food. Students in this program will visit Tokyo\, Kobe\, Kamakura\, and Hakone.
